For our newbies, the KFB foodie talk column - handled by Dobby of Dobbysignature -  is basically for ladies and 'guys' that are interested in learning how to cook better  ;).

There's this feeling of nostalgia that comes with scotch eggs when it's brought up in a conversation. I guess it has to do with the fact that it was one of the snacks introduced into the country when the first set of fast foods were established. Back then when you think of getting snacks to munch on, scotch eggs would definitely be part of the haul. 
Scotch egg is a popular tasty snack. It is quite similar to egg rolls but unlike egg rolls which is simply egg covered with dough, scotch egg is covered with sausage meat. 
Homemade scotch eggs is definitely tastier than any pre-packed scotch egg you can think of - Hands down. I just feel they don't make it as good as they used to make it back in the good ol' days were you'd have to bite through the soft layers of sausage before you get to the egg within. These days, you can already see the egg by merely looking at it in the show glass. This is why, i prefer making my own scotch eggs myself. That way, i get to decide the quantity of sausage i want around each egg. If you do try this recipe, do let me know how it goes. 
P.S: When buying sausages for scotch eggs, make sure you do a thorough check so you don't buy any pinkish looking sausage like this. When sausage is cooked, it's supposed to have a dramatic change in color from slight pink to a grayish cooked color. I probably had to learn the hard way after purchasing this product, cooking it for over 20 minutes and it still retained it's pink tint. Although it actually depends on the sausage as some brands of sausages can still be pink no matter how much you cook them, It's also very possible for sellers to put a little red food dye in the sausage to make the meat look more "attractive" when raw. So, check the sausage you intend buying before using it. Since the wrong sausage was used for this post, it'd be taken down and remade very soon. Until then, it'd stay up as part of my kitchen disasters and guide to help you in your sausage search. 

How to make scotch eggs
• Prep Time:  20 minutes
• Cook Time: 20 minutes
• Total Time: 40 minutes
• Makes:        8 scotch eggs

Tools you'd need:::
• Rolling pin
• Transparent plastic nylon or cling film
• Flat working surface/ chopping Board
• Rolling pin
• Frying Pan
• Mixing Bowl
Ingredients::: 
• 500g sausage meat
• 8 medium sized eggs
• 1 cup all purpose flour
• 1 cup fine dried breadcrumbs
• 2 eggs - For egg wash
• 1 tsp. Pepper - Optional
• 1 tsp. Nutmeg - Optional 
• 1 tsp. salt 
• Cooking oil for deep frying
Directions:::
Step 1: Get three bowls. Pour the all purpose flour in one bowl, Pour the bread crumbs in the second bowl, Crack open the 2 eggs in the final bowl and whisk - Set this aside.

Step 2: Place the 8 eggs in a pot of water and boil till you see cracks on the shell. By then you'll know it's hard boiled. Drain off the hot water and run the eggs through cold water immediately. This helps the shell come off smoothly. Remove the egg shell and set aside.


Step 3: Place the sausage in a medium sized bowl and add salt, pepper and nutmeg. Mix thoroughly to combine, Then divide into 8 portions.

Step 4: Open up the plastic bag and place one portion of sausage meat. Close the plastic bag and roll out the sausage meat with the rolling pin.


Step 5: Place one hard boiled egg in the center of the flattened sausage and mold the sausage around the egg using the nylon into a round ball.

Step 6: Roll the wrapped egg in flour, then dip in the beaten egg and finally dip in the breadcrumbs and coat generously.


Step 7: Heat the cooking oil in a deep pan till very hot then gently lower the wrapped eggs into the oil. Leave to deep fry for about 7-10 minutes on one side, turn and do the same on the other side on low heat till golden brown while turning consistently.

Step 8: Remove the scotched eggs from the oil and drain on a paper towel. Leave to cool slightly then Serve!
